Saturdays with Sarah: Go-To Meals, Part 3
Happy Saturday, folks!
I hope you’ve all had an amazing week! Today, I am continuing my series of “go-to” healthy meals that are easy and delicious.
Let’s talk about the most important meal of the day…BREAKFAST! We all know how busy mornings can be, but as a result, breakfast gets forgotten a lot of times. We find ourselves reaching for the donut or biscuit because it’s quick and easy. Or even worse, breakfast gets skipped altogether, leaving your body deprived of nutrition from about 7pm to 12pm…OVER 12 hours of NOTHING in your body! Yikes! And so then when you grab for that donut after 17 hours of an empty stomach, your body is going to store up that donut as fat because it thinks you’re starving. Not good all around!
So how can we make breakfast that is quick and healthy and TASTES GOOD? I’ll show you. Today I timed myself as I made one of my favorite breakfasts:
Meal 3: Egg White Breakfast Sandwich
What you’ll need:
- egg whites
- whole wheat english muffin
- Wholly Guacamole
Here’s a picture of the ingredients I used today, in case you want to buy the same things I did.
Cooking:
- Put english muffin in toaster (if you don’t like stuff toasted, obviously skip this step!)
- Put about 5 tablespoons of egg whites in a small skillet (sprayed LIGHTLY with cooking spray), and turn heat to between 4 and 5.
- When english muffin is done toasting, put 1 tablespoon of Wholly Guacamole on your english muffin, like this
- When the egg whites aren’t clear anymore, fold up the egg whites like you would fold an omelet. You could scramble them, but that may be messy on the small english muffin. So I typically fold the egg whites into a small shape so they will fit nicely on the english muffin.
- Place eggs on english muffin and guacamole, salt and pepper your egg, and you’re done!
Another option if you don’t like guacamole would be to put salsa and a LITTLE bit of reduced fat feta cheese on your egg and english muffin.
Remember how I said I timed myself while I made this? It took a whopping NINE MINUTES. I think we can all make time for 9 minutes in our mornings to make a healthy breakfast. This quote really strikes me to the core when it comes to healthy eating: ”If you really want something, you’ll find time to do it. If not, you’ll find an excuse.” Let’s give up our excuses and start taking steps to doing healthy things for ourselves!
After I made my sandwich, I grabbed a yogurt out of the fridge to take to work with me as a snack. Easy as can be! It was a delicious, easy, healthy breakfast! Can’t go wrong with that. Here’s a picture of my completed breakfast.
