Chef Crayton is a native of South Carolina with a long personal history in the restaurant industry — starting when he was 13. We discuss his career including his roles at Victor’s Bistro, his process for menu planning and ingredient selection, as well as where Victor’s is going both physically (Downtown in 2012) and philosophically as it develops into a much larger restaurant that also provides catering and hotel meal services 24/7/365, including breakfast for non-hotel guests.
